CHICKEN CURRY

We all enjoy incredibly delicious dishes full of flavors. [Tweet “Majority of people I know shy away from spices but I believe that they actually elevate dishes if used properly and with restraint.”]

Locally we are exposed to Indian food which is full of some of my favorite spices turmeric and garam masala. I can never go without these spices and I always have them stocked!!!

With time I have mastered my own version of chicken curry however in this instance I incorporated peas which were a first for me but it turned out great.

I began by marinating the chicken in garlic, ginger, turmeric, garam masala, paprika, salt & black pepper, yoghurt and green bell peppers for an hour in the fridge.

Then I fried some chopped onions in vegetable oil until they were translucent before I added some garlic this is a must in all my curry dishes. I then proceeded to add the tomatoes which I cooked down before adding tomato paste and cooked it further for about 2 minutes.  Then I proceeded to add the  marinated chicken into the pot which I continued to stir ensuring that the chicken was covered with the cooked tomatoes about 3 minutes before adding the water ensuring that the chicken was just covered no more. After about 10 minutes into the cooking of the chicken I added the peas to the cooking chicken and covered and cooked for a further 10 minutes.

The whole house was filled with the aroma from the chicken which made the wait even more difficult i tell you. This was such a tasty result which could be served on its own or served with some cardamom rice or chapati.
