BANANA MUFFINS

I have just began my baking journey and as promised I will be sharing my experiences, recipes and results with you guys.

I consider myself to be an infant in this process still taking the initial steps which are hard but the feeling is incredible once taken. My plan is starting with some simple muffins, cupcakes, cakes and bread before venturing into the monsters, can’t wait!!

I had some banana’s that were going bad fast. When they get ripe, I prefer making smoothies with them but in this case  I opted to incorporate them in the muffins which were served for breakfast. Read more

ELEPHANT HILL HIKE

I have been hoping to start exercising for a long time but I keep on making excuses for it. When I heard there was going to be a hike in Elephant hill, looks like an elephant from a distance, in the Aberdare Ridge I deliberated over it until the very last minute, when I decided to give it a try.

The facilitators informed us that this was going to be a serious hike and if you are a first time hiker you had to be very fit!!! I was a bit worried due to my inactivity over the past few years. Read more

BAKED AVOCADO, EGGS & BACON

Due to the busy schedules everyone is keeping, it has become quite challenging for families and friends to share recipes like before. As a result there is a generation willing to learn how to cook but they do not know where to start, luckily this is the internet era where e-magazines, newsletters, food blogs, cooking networks and most of all you tube exist.

For sometime I kept on seeing this recipe on food blogs, you tube, Facebook and as a result I kept on wanting to try it out. I was skeptical at first since I have known for a long time that cooked avocados tend to get this this unpleasant bitter taste!!! Despite the lingering doubts I decided why not. Read more

COFFEE POACHED PEARS

Pears are back in season, and I have to say that I have been munching on these delights almost everyday.

After weeks of eating them i thought to myself why not try making a fruity dish out of them. I remembered that sometime back i came across across a recipe in which they had poached the pears in coffee, dipped them in chocolate and they looked delicious and at the time i thought to myself that’s something I would try!!! FRENCH TOAST & CARAMELIZED BANANAS

If you work a 9-5 in Nairobi you are probably forced to leave your house at least an hour before earlier in order to make it to work on time, which at times is close to two which is ridiculous. On the other had in order to avoid the crazy jams I prefer leaving the house pretty early and as a result \i end up having breakfast at work. That’s why over the weekends I spoil myself with breakfast prepared by myself.

On this particular Saturday I was missing my mum and her cooking. Since I could not travel all the way home for mummy’s cooking I decided to prepare one of the dishes which she taught me how to prepare way back in primary school, the classic but sumptuous french toast. Read more

Reflections

In life, different experiences affect/influence our subsequent decisions. As a result it is human nature to evaluate what we have achieved in comparison to our expectations.

For a long time I kept on thinking of a platform where I could share my love of food and the experiences that come with it.  Hence the blog, adashofpepper.com, and I have to say that although it is barely a year it has been a very interesting, fulfilling journey through which I have learnt new recipes, new cooking techniques, photography, blogging etc. Read more

For many of us making dessert at home is perceived as such a task that is either impossible to accomplish or too much work and we would rather  just buy the pastries and serve them at home for dessert. Tilapia + rice & kale

Who says quality & delicious meals have to be complex prepared with some expensive and not very readily available ingredients?

I have learnt that in order to appreciate the diversity of meals you have to be comfortable enough to work with the ingredients that are readily available to you. You can whop something amazing in the kitchen from the simple ingredients  in all our kitchens from the onions, potatoes, tomatoes etc. This concept is tested by the chefs at master chef who from time to time ask the contenders to take the everyday ingredients and elevate them!
