Recently we have been facing some challenges with our site. This resulted in unavailability of some of the posts but not to worry we have successfully restored them with the exception of the Tilapia & Cous Cous recipe below.
Nairobi’s food industry has seen a tremendous growth in the past few years. There are more and more restaurants and different cuisines to try. Some of the ingredients you come across at these establishments you are doubtful that they are sourced locally.
When I randomly came across a pack of Couscous at a local supermarket, I was beyond excited and couldn’t wait to try it at home. The package contained preparation directions which were simple & very easy to follow. The results were beyond my expectations for a first try!!!
I decided to add a MY own touch to the ingredients by serving it with some vegetables and Tilapia which are locally available ingredients.
For this dish I decided not to go crazy on the ingredients since I am yet to work with it so much to understand the different flavor combinations which work.
For the Couscous;
I boiled some water in equal part to the Couscous (e.g. 100 g which is enough for two), added some salt and vegetable cooking oil.
I then added the Couscous to the boiling water and removed it from the heat left it in the pot covered for about 3 minutes. Thereafter I fluffed it, returned it to the heat added butter and kept on stirring it for about two minutes and put it aside.
Thereafter fried some red onion in some butter once cooked I added the peas and carrots cooked for about two minutes before adding the Couscous and some salt & pepper.
Taste to ensure that it is properly seasoned before setting aside.
For the Tilapia;
I dried the fish sing some napkins before seasoning it with some salt and pepper.
Thereafter heat some butter in a pan (preferable non-stick if you have one otherwise no worries) and add the chopped garlic.
Garlic and butter burn very easily so you have to work very quickly.
Place the tilapia in the pan and ensure that all the garlic is on top of the fish as It cooks to infuse the flavours and avoid burnt garlic with your fish.
Cook each side for about 2-3 minutes before setting aside.
Avoid use of too much butter as the fish will be greasy.
Serve the Couscous with the tilapia and enjoy this mouthful delicacy.
