When they say that the best things in life are free it is true but they are also simple. As I grew up I came to learn that despite Githeri being mums favourite meal it was both part of our inheritance and culture.

When making the Githeri, she always ensured that it was loaded with lots of vegetables ranging from carrots, potatoes, pumpkins, tomatoes etc.  I don’t think that I ever tired of the meal until I boarded in high school. WHEN THEY SAY REPETITION IS BORING THIS IS TRUE MY FRIENDS. THE DISH WHICH WAS SERVED DAILY DID NOT CONFORM TO THE STANDARDS I WAS USED TO!!!

Although at the time I thought that after high school I would never have this meal again, it only took mamas recipe to bring the magic back.  Due to some tight schedules I have not been making Githeri lately but this weekend I did.

While at the market I came across some maize combs which I used to make some mukimo another traditional delicacy and the rest I used to make this delicious Githeri but substituted the peas with beans to make the original Githeri as per my ancestors’ recipes.

After shelling the maize I cleaned it, added equal measure of some kidney beans, which I cooked in water under medium heat until tender.  I incorporated lots of vegetables as I used red onions, garlic & ginger, tomatoes, green pepper, carrots, potatoes and finally garnished with some cilantro. Being a lover of spices, I decided to add some salt, black pepper, beef cubes, red chili, paprika, garam masala, and turmeric and tomato paste for that deep red color.I began the process by frying the onions in some vegetable oil and when translucent I added the garlic & ginger. After they were also translucent I added the tomatoes and cooked them down until they were reduced. I thereafter added all the spices/additions above and cooked them down until they started sticking to the pan. The aroma in the house was amazing.  I then proceeded to add all the vegetables with the exception of the cilantro added 1 cup of water and let it cook. It took me about 30 minutes.

Usually the meal is enjoyed with some avocado but in this instance I decided  to serve it with some boiled eggs and I must say delicious is an understatement.
