Recently we have been facing some challenges with our site. This resulted in unavailability of some of the posts but not to worry we have successfully restored them with the exception of the Tilapia & Cous Cous recipe below.
Nairobi’s food industry has seen a tremendous growth in the past few years. There are more and more restaurants and different cuisines to try. Some of the ingredients you come across at these establishments you are doubtful that they are sourced locally.
When I randomly came across a pack of Couscous at a local supermarket, I was beyond excited and couldn’t wait to try it at home. The package contained preparation directions which were simple & very easy to follow. The results were beyond my expectations for a first try!!!
I decided to add a MY own touch to the ingredients by serving it with some vegetables and Tilapia which are locally available ingredients.
For this dish I decided not to go crazy on the ingredients since I am yet to work with it so much to understand the different flavor combinations which work.
Oprah surprised the world with her “I love bread” remarks but don’t we all my sentiments exactly especially banana breads.
A few years back I used to enjoy some freshly baked banana bread at a restaurant which frequented however it unfortunately shut down. So after weeks of mouthwatering delicious looking Instagram banana bread photos and promising recipes online I gave in and made my first attempt which although good it was a bit too sweet for my liking but I reviewed the recipe by slightly reducing the amount of sugar in the recipe.
The best thing about this recipe is the fact that the ingredients are readily available and I think they can be found even in the baking beginners kitchens. The preparation and cook time of the banana bread takes longer than my other baking experiences which I have previously shared here but the results are equally delicious. Read more
I have just began my baking journey and as promised I will be sharing my experiences, recipes and results with you guys.
I consider myself to be an infant in this process still taking the initial steps which are hard but the feeling is incredible once taken. My plan is starting with some simple muffins, cupcakes, cakes and bread before venturing into the monsters, can’t wait!!
I had some banana’s that were going bad fast. When they get ripe, I prefer making smoothies with them but in this case I opted to incorporate them in the muffins which were served for breakfast. Read more
When you have an extremely busy schedule pasta is a life saver as it is easily prepared within 10 minutes max, the plus though is that it can be served with literally anything ranging from beef, chicken, eggs and if you prefer vegetables they are good to go too. Read more

I was watching one of the episodes on Master chef, which happens a lot, and one of the contestants made scotch eggs from canned crab which was impressive and this made me remember my pork sausage scotch eggs. There are times when you are so busy that when the week ends you look back and think to yourself really! The week is over! I met my deadlines! Thank God! For me I reward myself by sleeping in on Saturday, making myself a sumptuous breakfast, catch up on my series and food shows, research on recipes but the best part for me is when I try the new recipes. My inspiration to try new dishes comes from from food blogs & websites, restaurants, friends, my mum who is constantly introducing me to new recipes, MASTER CHEF, MASTER CHEF juniour, honestly I cannot tell you often I watch the show.
